Shortbreads au citron et graines de pavot de Pascale... parce que décidément les biscuits...
J'aime bien les nouveaux livres de cuisine... Beaucoup, beaucoup, beaucoup... mais j'aime aussi de temps retrouver ceux avec qui j'ai passé du temps et pris du plaisir à cuisiner. Et c'est ce qui est arrivé quand j'ai retrouvé le livre de Cookies, muffins & Co de Pascale un livre qui date de quelques années mais qui reste foutument d'actualité ! Et après avoir très très longuement hésité...
J'ai décidé de partager avec vous une recette de Shortbreads qui se sont révélés aussi facile à faire que réjouissants à l'heure du thé. Allez direction la cuisine !
Shortbreads au citron et graines de pavot de Pascale
Les courses :
- 150g de farine – 50g de sucre roux en poudre – le zeste râpé finement d'1 citron vert – 1 càs de graines de pavot – 90g de beurre demi-sel (sortez-le bien en avance) – 2 càc de jus de citron vert – 2 càs de lait – du sucre roux pour la fin
La recette :
Mélangez la farine, le sucre, le zeste de citron et les graines de pavot dans un saladier. Ajoutez le beurre et mélangez du bout des doigts. Ajoutez le lait et le jus de citron et pétrissez jusqu'à obtenir une jolie pâte.
Étalez la pâte, environ 5mm c'est bien. Découpez-la avec un emporte pièce ou un verre d'environ 5cm de diamètre. Recommencez avec la pâte restante.
Déposez les biscuits sur une plaque couverte de papier cuisson. Piquez 3 fois chaque biscuit à la fourchette. Saupoudrez de sucre.
Enfournez une douzaine de minutes dans un four préchauffé à 160°C.
Y'a plus qu'à laisser refroidir et tea time !

BatailleFood 8 et chocolat avec son shorbread XXL au gingembre à trempouiller !!!
Ingredients: 150g flour - 45g brown sugar (look for the fine kind) - 90g salted butter - 2 Tbsp milk - 30g candied ginger
Put the flour and sugar in a large bowl.
Cut the butter in pieces and add in to the bowl and mix it in with your fingertips until it forms a crumbly dough. You may need to insist.
Finely chop the ginger.
Add the milk and ginger and mix.
Make a big ball of dough and make a circle. Set aside in the fridge for 15 minutes.
Place the dough on parchment paper dusted with flour and roll it out to 1cm thick.
With a tartlet mold, cut the shortbreads (you should be able to make 2, 12cm each).
With a fork, make 2 lines crossing in the center so that you can easily break them in 4.
Cautiously put the parchment paper with the shortbreads on a cookie sheet and bake, in the oven preheated at 160°C/320°F for 18 to 20 minutes.
Put the shortbreads on a cooling rack when they're done.
You can serve with a delicious Hot Chocolate, like Pipa's hot chocolate.

Shortbread tartelettes à l'abricot Bonne Maman et aux amandes, un petit plaisir au goût de madeleine d'enfance…

centre… ben forcément y'a plus que ça… Et les petits gâteaux à
la confiture forcément c'est pareil.Apricot and almonds shortbread tartlets
Ingredients: 1 jar apricot jam (I used Bonne Maman) - 220g butter - 150g icing sugar - 300g flour - a few drops bitter almond extract - sliced almonds, slightly toasted
Put the butter and icing sugar in a mixer bowl, blade on (not the sharp, cutting kind).
Mix until it is getting light, until it has the consistency of a smooth cream. Add in the flour and bitter almond extract and turn on low speed until it becomes a homogeneous dough. It will become sticky and form a ball.
Wrap it in cling film and put in the fridge for half an hour.
Roll out the dough to 5mm thick.
Cut disks the size of your tartlet molds. Line the molds with these disks of dough and cut out the excess (just pressing it against with edge with your thumb or a rolling pin). Firmly press the dough into the molds.
Put in the oven, preheated at 200°C/400°F for 8 to 10 minutes (depending of their size) until they barely start to become golden.
Take them out of the oven and and press the bottom with the back of a spoon.
Put 2 generous tablespoons of jam in each mold.
Put back in the oven at 220°C/430°F for another 8 to 10 minutes until the tartlets are golden and the jam starts to bubble. Do not hesitate to take them out before that time if you see the tartlets are about to burn.
Mix together 1 tablespoon of jam with 1 tablespoon of water and gently coat the edges without touching the jam itself.
Sprinkle the edges with sliced almonds that will then stick. Let cool down.
Of course, you can try this recipe with any other jam.

Je suis un trempouilleur heureux ! Et je m'assume !!! Shortbreads enchocolatés qui sont bien meilleurs trempouillés...
For the biscuits: 220g butter - 180g icing sugar - 300g flour - 1 vanilla bean
For the crunchy chocolate cream: 100g dark chocolate - 100g Nutella - 45g candied hazelnut, finely chopped
Put the butter and icing sugar in a mixer bowl, blade on (not the sharp, cutting kind). Split the vanilla bean in 2 and scrape the seeds over the mixer bowl.
Mix until it is getting light, until it has the consistency of a smooth cream. Add in the flour and turn on low speed until it becomes a homogeneous dough. It will become sticky and form a ball.
Wrap it in cling film and put in the fridge for half an hour.
Roll out until it is almost 1 cm thick. Cut disks with a cookie cutter and put them on a cookie sheet lined with parchment paper.
Cook for 35 to 40 minutes in the oven, preheated at 140°C/285°F.
Let cool down completely.
Put the chocolate in a bowl and melt it in the microwave.
Add in the Nutella and quickly mix. Add the chopped candied hazelnut and mix again.
Spread the chocolate on half of the biscuits and add another biscuit on top like cookie sandwiches.

Le vendredi c'est retour vers le futur ! Et des fois le samedi… Mini-tarte au citron very british !
Ingrédients : 1 paquet de shortbread – 1 pot de lemond curd – 1blanc d'œuf – 50g de sucre en poudre – 1citron vert
Commencez par creuser les butter shortbreads avec une petite cuillère, il ne faut pas trop creuser sinon le biscuit va se briser.
Montez ensuite le blanc en neige très ferme, puis tout en continuant de battre, versez tout doucement le sucre en poudre sur le blanc battu. Dès que tout le sucre bien incorporé arrêtez de suite.
Mettez sur le shortbread environ ½ càc de lemon curd, puis couvrez-le bien généreusement de blanc d'œuf battu. Faites joli si vous voulez en faisant des pointes ou des volutes.
Une fois toutes les mini-tartelettes réalisées enfournez dans un four préchauffé à 150° pendant une douzaine de minutes en surveillant bien la cuisson, ça brûle très très vite !
Quand les mini-tartelettes sont cuites, sortez-les du four et posez-les sur une grille.
Ajoutez alors à votre goût un peu de lemon curd et du zeste de citron vert râpé très très fin… ensuite… dévinez !
