J'ai longtemps
hésité aujourd'hui et j'ai failli me lancer à la recherche d'une recette de
cuisses de grenouilles ou de cassolette d'escargot… Et puis finalement je me
suis dit qu'une bonne recette bien réconfortante à déguster derrière les
carreaux en regardant tomber la pluie tomberait beaucoup mieux !
Et du coup j'ai
retrouvé avec plaisir cette recette inspirée d'une recette de Ruben, le jeune
sympathique et talentueux cuisinier découvert il y a quelques temps du côté de
M6.
Tout moelleux
gâteau très amande et chocolat
Ingrédients :
200g de sucre en poudre – 140g d'amandes émondées – 150g de blancs d'œufs (soit environ 5blancs) –
170g de beurre – 60g de farine – 75g de chocolat noir fondu – 30g d'amandes
effilées
Pour décorer :
10g de chocolat fondu – 10g de Nutella
Mettez le beurre
dans une petite casserole et faites-le colorer noisette, attention à ne surtout
pas le brûler, puis laissez refroidir.
Mixez finement le
sucre et les amandes entières.
Versez les blancs
d'œuf dans un batteur de battez-les rapidement surtout sans les monter en
neige. Ajoutez le sucre aux amandes et battez bien.
Laissez tourner
votre batteur et versez le beurre ne filet. Ajoutez la farine et battez une
dernière fois.
Ajoutez alors le
chocolat et les deux tiers des amandes effilées et mélangez rapidement à la
cuillère.
Versez votre pâte
dans un moule couvert de papier sulfurisé, saupoudrez les amandes effilées
restantes et enfournez pendant 25 à 30 minutes dans un four préchauffé à 180°.
Quand le gâteau
est cuit décorez-le en mélangeant le chocolat fondu et le Nutella. Si vous êtes
joueur comme moi trempez un fouet dans ce mélange et faites tourner le fouet de
manière à projeter le chocolat sur le gâteau… c'est joli mais vous risquez
aussi comme moi d'être repeint au chocolat… sinon avec une cuillère c'est bien
aussi !
Almond and chocolate soft cake
Ingredients: 200g caster sugar - 140g blanched almonds - 150g egg whites (from about 5 eggs) - 170g butter - 60g flour - 75g of melted dark chocolate - 30g sliced almonds
To decorate: 10g melted chocolate - 10g of Nutella
Put the butter in a small saucepan and brown it quickly until nut-brown.
In a food processor, finely blend the almonds with the sugar.
In a mixer quickly beat the egg whites but do not whip them up. Add the sugar and almonds and beat well.
With the mixer still on, slowly add the butter and then the flour.
Add the chocolate and 2/3 of the almonds and quickly mix with a spoon.
Add the chocolate and two thirds of the almonds and mix quickly with a spoon.
Pour the batter in a pan lined with parchment paper.
Sprinkle with the remaining almonds.
Bake for 25-30 minutes in the oven preheated at 180°C/350°F.
When the cake is baked decorate with the melted chocolate mixed with Nutella.
