Ingredients for 2: 10cl cachaça - 2 Tbsp cane sugar syrup - 1 lime - 1 passionfruit - 1 Tbsp caster sugar - sparkling water - loads of ice cubes
Pour the inside of the passionfruit into a small saucepan and add the caster sugar. Bring to the boil and turn the heat down. Let simmer, stirring regularly, for 2 to 3 minutes, making sure it doesn’t reduce too much.
Filter and let cool down.
Cut the lime into pieces and evenly distribute in 2 glasses. Pour the cane sugar syrup and passionfruit syrup as well as the cachaça and if you like it like I do, top with some sparkling water… just a tiny bit. Serve immediately.
